How do you account for hermaphrodites?

How do you account for sexual reproduction in tunicates, mollusks, and earthworms? What about hermaphroditic teleost fish families?

I don't think I missed a "main definition." Chromosomes, gonads, and anatomy are used to distinguish sex.
